Chicken and Rice

Chicken and rice is a good, traditional recipe.  There are a number of different ways to prepare it. You can make it as a casserole; you can slow cook in a crock pot; however, the way we’re going to show you is a simple way to quickly prepare chicken and rice at home in under half an hour.

Ingredients:

  1. 2-4 boneless chicken breasts (according to the number of people who will be joining you).
  2. 2 cups of uncooked rice
  3. 4 cups of water
  4. Crushed red pepper/turmeric (optional)

The Process:

  1. In a large pot, boil 4 cups of water.
  2. Add 2 cups of uncooked rice to the pot of boiling water.
  3. Cover the rice and let it simmer for 20-30 minutes, or until the rice roughly doubles in size and is no longer watery.
  4. In a skillet or saucepan, pour 2-3 Tablespoons of vegetable oil. Let it warm on the stove top on medium heat for a minute or two.
  5. Brown your chicken in the saucepan or skillet. You can leave the breasts whole, cut them into strips, or slice them into bite-size pieces; it’s your choice.
  6. As the chicken cooks, season it with a little turmeric or crushed red pepper to spice it up.
  7. Serve chicken and rice together.

An excellent meal that comes together in under half an hour, and goes great with steamed vegetables.

If you enjoy barbecue chicken, you can stir some barbecue sauce into the saucepan about 30-60 seconds before removing the chicken from the heat. Be sure not to add the barbecue sauce too soon, or the sauce will burn and stick to the pan and the chicken, giving it a bitter, charred flavor.

If you plan to cook rice regularly, consider investing in a rice cooker.  We own and use this one, and it works very well.
