An Easy Way to Enjoy Asparagus

By David & Martha Cox 05/26/2010

Spring is in full swing, and with it comes a variety of fresh fruits and vegetables that are a little more expensive at other times of the year.  One of those is asparagus.

Asparagus has many health benefits, but it’s a tad on the pricey side–except when it’s in season.  So as you enjoy the warmer weather, be sure to pick up some asparagus from the grocery store or your local farmer’s market.  If you need some tips on enjoying your asparagus, try this simple recipe from Aquila, one of our readers.

We have been enjoying asparagus this year by snapping off the end, placing the spear on a rectangular piece of stoneware, drizzling with EVOO (Editor’s Note: EVOO is Extra Virgin Olive Oil), and sprinkling with season salt.  Bake at 375 for 15 minutes.  (preheat the oven)  YUMMY!!!

If you’re unsure about using Aquila’s method, you can always just immerse the asparagus in boiling water for a few minutes (until tender).  After you remove it from the water, spread a little butter on it before serving.  No matter how you prepare it, asparagus is a tasty treat that you should try while it’s available.
