Easy Recipe: Chicken Quesadillas

Quesadillas are one of my favorite foods. In college, I used to go to the California Cafe in our student center, where I would order a chicken quesadilla–sometimes on a daily basis. As a result, I had hundreds of opportunities to watch the cooks behind the counter whip up these tasty treats in a matter of minutes, and I have to say I was impressed with how simple it was to make such a delicious meal.
After I got out of college, I decided to come up with my own chicken quesadilla recipe. Here’s what I found.
Ingredients:
- 1-2 chicken boneless breasts, defrosted
- 1/2 an onion, chopped
- 1 green bell pepper, chopped
- Grated cheese to taste (I use a few handfuls of cheddar combined with some mozzarella).
- Crushed red pepper
- Flour tortillas
- Some olive or vegetable oil for grilling
The Process:
- My recipe is pretty simple. The first thing I do is cut my defrosted chicken into bite-size pieces.

- Next, I saute the chicken on the stove top for a few minutes–until it’s nice and cooked.

- As the chicken sautes, I sometimes add some onion and green bell pepper.
- When the chicken is cooked, place a few chunks of it on a tortilla along with cheese, onions, bell pepper, and any spices you want (e.g. crushed red pepper).

- Fold your tortilla in half. Grill it on the stove top over medium heat, giving it a few minutes on each side. If you have a quesadilla-maker or sandwich grill, you can also use that for this process.

- Repeat the process, cooking each quesadilla until the cheese is nicely melted and the tortilla somewhat crispy.
This recipe will make enough quesadillas for 2-4 people, depending on how hungry you are. These quesadillas work well as both snacks and meals–just make enough to suit your needs. They also don’t take much time or money to prepare, which is an added bonus.
