Baked Peaches

This is a guest post from Martha’s aunt, Kim.  It utilizes canned fruit, a simple, inexpensive way you can get a serving of fruit without handing over a lot of cash.  While canned fruit isn’t as healthy as fresh (or even frozen) fruit, it is still fruit, and therefore has some of the nutrients found in fresh fruit (not to mention it tastes good).

Ingredients:

  • 1-2 cans Del Monte peach halves in heavy syrup (how many depends on the number of guests; as they cook down, I usually allow for three halves per guest).
  • Butter
  • Brown sugar
  • Cinnamon
  • Lemon juice

The Process:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Lay peach halves, cavity side up, in a low casserole or pie dish.
  3. Cover with half the peach syrup from can.
  4. Put a dab of butter and a touch of brown sugar in each peach half.
  5. Sprinkle with cinnamon.
  6. Squeeze the juice of a lemon over all.
  7. Bake in the oven at 350 degrees for 1 hour (the juice must be cooked down and the peaches brown).

Can be used as a side or a dessert.  Just add spray whipped cream or ice cream if using as a dessert.  Of course, it’s bad for you – makes me feel like Paula Deen with the butter, but it tastes really good.

It’s extremely easy to make, and the ingredients are usually already in the house;  it’s hard to burn or overcook; most important, everyone likes it.  With only using a few ingredients, it definitely fits under the title “cooking on a shoestring”.  Hope you enjoy it.

Believe us, Kim, when we say we will.  This recipe can be expanded to feed as many or as few people as you need.  It shouldn’t run you more than a few dollars altogether, and it will definitely make your friends say “wow” when they taste it.
